Ingredients

  • 12 oz (340 g) pasta
  • 2 chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1 tablespoon lactose-free butter or olive oil
  • 4 garlic cloves, minced
  • 1 cup lactose-free cooking cream or unsweetened dairy-free cream
  • ½ cup chicken broth
  • ½ teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional
  • 2 tablespoons chopped fresh parsley
  • ¼ cup lactose-free Parmesan or dairy-free Parmesan alternative, optional

Instructions

1. Cook the Pasta

Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente.

Reserve about ½ cup of pasta water, then drain the pasta.

2. Cook the Chicken

Season the chicken breasts with paprika, Italian seasoning, salt, and black pepper.

Heat olive oil in a large skillet over medium-high heat. Cook the chicken for about 5–6 minutes per side, or until cooked through.

Transfer the chicken to a cutting board and let it rest for a few minutes before slicing.

3. Prepare the Garlic Sauce

Reduce the skillet heat to medium. Add the lactose-free butter and minced garlic.

Cook for about 30 seconds until fragrant.

Pour in the chicken broth and scrape the browned bits from the bottom of the skillet.

Add the lactose-free cooking cream and red pepper flakes. Stir and simmer gently for 2–3 minutes.

4. Combine the Pasta and Sauce

Add the cooked pasta to the skillet and toss until evenly coated.

If the sauce is too thick, add a little of the reserved pasta water until you reach your preferred consistency.

Stir in the lactose-free Parmesan or dairy-free alternative, if using.

5. Add the Chicken

Slice the cooked chicken and place it over the pasta.

Finish with fresh parsley and serve immediately.
